Cauliflower Pizza Base
Once you have made this, as foreign as the concept seems, I promise you it will become one of your favourite things to cook and to eat! The trick is have the oven nice and hot to start with make sure you properly crisp up your base before adding toppings.
(makes two 30cm round pizza bases)
700g cauliflower florets, broken apart a little
100g almond meal
3 eggs, lightly beaten
50g grated parmesan
lots of cracked pepper and a pinch of salt flakes
Preheat your oven to 200C and line two 30cm round pizza trays with baking paper.
Place half of the cauliflower into a food processor and pulse until it is finely chopped, almost like breadcrumbs. repeat with the other half. Pour cauliflower into a mixing bowl and add the remainder of the ingredients. Mix together really well, I like it use my hands to made sure the egg is incorporated properly.
Divide the mix into two and press onto the trays and smooth the top down gently with your fingers. Bake, rotating occasionally for 25-30 minutes until the bases are crispy and holding their shape.
I like to top mine with passata, fresh mozzarella, anchovies and zucchini but you could add anything you like. Pop back in the oven 10 minutes to melt the cheese and allow the toppings to become oozy and delicious!
